Fermentation is the process of preparing microorganism itself, or directly metabolizing products or secondary metabolites, by means of microbial life activities under the conditions of aerobic or anaerobic conditions.

The common bacteria in fermentation industry are: Yeast, lactobacillus, bacillus subtilis, etc.
